Our menu, respecting the system of the short food supply chain,
only includes dishes made with our own products, local products,
or products certified from Tuscany.
Exceptions are some products of the municipality neighboring
with Bagni di Lucca of the Province of Modena (Emilia Romagna)
and others whose area of production includes only part of our Region,
as well as certain gluten-free products, as well some ingredients to complete
the dishes referred to in the Regional Regulations.
“To provide transparency and communicate better, in order to improve the familiarity
of Tuscan certified products and their features” in this paper we report the official
classification of the ingredients we use and their origin.
